Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Meatballs
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse produce and pat dry.
In a mixing bowl, combine ground pork, taco seasoning, crème fraîche, 1/2 tsp. salt, and panko. Form into 16 evenly-sized meatballs. Place meatballs in one provided tray.Bake uncovered in hot oven until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 28-32 minutes.While meatballs bake, continue recipe. -
2 Bake the Corn
In second provided tray, combine corn, 1/4 tsp. salt, and a pinch of pepper. Top with dots of chipotle butter (to taste).
Cover tray tightly with foil.After meatballs have baked 10 minutes, place second tray in hot oven and bake covered until heated through and butter is melted, 15-18 minutes. -
3 Bake Meal and Make Rice
After 28-32 minutes, remove meatballs from oven and carefully drain any excess liquid. Top with enchilada sauce and cheese. Bake again uncovered in hot oven until cheese is melted, 7-10 minutes.
While meatballs bake, in a large microwave-safe bowl, combine rice, 21/2 cups water, adobo seasoning, and 1/4 tsp. salt. Microwave uncovered, 4 minutes.Carefully, remove rice from microwave and stir. Microwave again uncovered, 2 minutes.Carefully remove from microwave. Rest, 3 minutes.Carefully remove both trays from oven.To serve, top rice with meatballs. Bon appétit!
