Cooking Guidelines

If using mahi-mahi, halve any larger pieces to match smaller pieces. Pat dry. Cook until mahi-mahi reaches minimum internal temperature, 3-4 minutes per side. Fish thickness can vary; if you receive a thinner fillet, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Cook the Chicken
Pat chicken dry and season both sides with rotisserie seasoning and flour.
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add chicken to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes per side.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner. -
2 Add the Sauce
Add cream base to hot pan with chicken. Bring to a simmer.
Once simmering, stir occasionally until sauce has thickened, 2-3 minutes.Remove from burner. Stir in lemon juice.While sauce thickens, continue recipe. -
3 Make the Orzotto
Quarter mushrooms.
Place another medium non-stick pan over medium heat and add 2 tsp. olive oil. Add mushrooms to hot pan and stir occasionally until browned, 4-6 minutes.Add 1/4 cup water, orzo, and garlic salt. Stir occasionally until orzo is heated through, 1-2 minutes.Remove from burner. Stir in butter until melted and combined. -
4 Finish the Dish
Plate dish as pictured on front of card, topping chicken with sauce from pan and garnishing with cheese. Bon appétit!
