If using NY strip steak, follow same instructions as sirloin in Steps 2 and 4, searing until browned, 2-3 minutes per side, then roasting until steak reaches minimum internal temperature, 9-11 minutes. Rest, 3 minutes. Halve to serve.

If using chicken breasts, follow same instructions as sirloin in Steps 2 and 4, searing until browned, 2-3 minutes per side, then roasting until chicken reaches minimum internal temperature, 10-12 minutes.

If using pork chops, follow same instructions as sirloin in Steps 2 and 4, searing until browned, 2-3 minutes per side, then roasting until pork reaches minimum internal temperature, 6-8 minutes. Rest, 3 minutes.

1 Prepare the Pommes Dauphine
Peel and cut potatoes into large evenly-sized chunks.
Bring a medium pot with potato chunks covered by water to a boil. Cook until fork-tender, 10-12 minutes.Drain potatoes in a colander and return to pot. Add garlic salt, mayonnaise, and panko and mash until combined and smooth.Form potato mixture into eight evenly-sized balls, then gently flatten to 1/2"-thick cakes.While potatoes boil, prepare ingredients. -
2 Prepare Ingredients and Make Cilantro Butter
Trim ends off green beans.
Stem and mince cilantro.Mince garlic.In a mixing bowl, combine cilantro and butter. Set aside.Pat steaks dry, and season both sides with chile and cumin rub and a pinch of salt and pepper. -
3 Start the Green Beans
Place green beans on prepared baking sheet. Toss with 1 tsp. olive oil, garlic, 1/4 tsp. salt, and a pinch of pepper.
Spread into a single layer. Roast in hot oven, 5 minutes.While green beans roast, sear steaks. -
4 Cook Steak and Finish Green Beans
Place a medium non-stick pan over medium-high heat. Add 1 tsp. olive oil and steaks to hot pan. Sear undisturbed until browned, 2-3 minutes per side.
Carefully remove baking sheet from oven. Push green beans to one side. Baking sheet will be hot! Use a utensil. Transfer steaks to empty half. Wipe pan clean and reserve.Roast in hot oven until green beans are tender but still crisp and steaks reach a minimum internal temperature of 145 degrees, 7-9 minutes.Carefully remove from oven. Rest roasted steaks, 3 minutes.While steaks and green beans roast, cook pommes dauphine. -
5 Cook Pommes Dauphine and Finish Dish
Return pan used to sear steaks to medium-high heat and add 4 tsp. olive oil.
Working in batches if necessary, add Pommes Dauphine to hot pan and cook until golden-brown, 2-3 minutes per side.Remove from burner.Plate dish as pictured on front of card, topping steaks with cilantro butter. Bon appétit!
