If using chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

If using NY strip steak, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

Prepare Ingredients and Crisp Bacon
Trim and thinly slice green onions.
Pat pork dry and season all over with fiesta seasoning and a pinch of salt. If you receive a whole pork tenderloin, pat dry and, on a separate cutting board, slice into medallions, 3/4"-thick.Line a plate with a paper towel.Place a medium non-stick pan over medium heat. Add bacon to hot, dry pan. Stir often until crispy, 1-2 minutes.Remove from burner. Transfer bacon to towel-lined plate. Reserve pan; no need to wipe clean. -
Cook the Pork
Place another medium non-stick pan over medium heat and add 1 tsp. olive oil. Add pork to hot pan and cook until pork reaches a minimum internal temperature of 145 degrees, 3-5 minutes per side.
Medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Remove from burner. Transfer to a plate and tent with foil. Rest, 3 minutes.While pork cooks, continue recipe. -
Heat the Sweet Potatoes
Return pan used to crisp bacon to medium heat.
Add sweet potatoes, plain butter, and a pinch of salt and pepper to hot pan. Stir often until butter is melted and potatoes are heated through, 1-2 minutes.Remove from burner. -
Make Sauce and Finish Dish
Place chipotle butter (to taste) in a microwave-safe bowl. Microwave uncovered until melted, 25-35 seconds.
Carefully remove from microwave. Add 2 tsp. cold water and mayonnaise. Stir vigorously until completely combined.If sauce is too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Plate dish as pictured on front of card, topping pork with sauce (to taste) and garnishing sweet potatoes with crisped bacon and green onions.
