Place cauliflower, corn, and seasoned salt blend in the pan. Top with cheddar cheese.
Add pork and season with 1/4 tsp salt and a pinch of pepper.Roast in a hot oven until cauliflower is tender and pork reaches a minimum internal temperature of 145 degrees, 25-27 minutes.Spread chipotle mayo evenly on pork chops. Top with tortilla strips. Add cholula to taste.
