This simple weekday recipe brings a lot of flavor in some basic bits. Meatloaves may seem quite normal, but we spice it up chipotle pesto in the mix, and a guacamole crema plopped on top. And green beans ain't exactly a rare food find, but we spice it up with a bit of seasoning and dash of fresh tomatoes and cilantro. Weeknight doesn't have to be boring.

If using 20 oz. ground pork, follow same instructions as 10 oz. ground beef, forming four meatloaves instead of two.

If using ground beef, follow same instructions as ground pork in Steps 2 and 3, baking until beef reaches minimum internal temperature, 23-25 minutes.

1 Prepare the Ingredients
Core tomato and cut into 1/4" dice.
Trim ends off green beans.Stem and mince cilantro.Combine panko and 1/4 cup water in a mixing bowl. Let sit, 2 minutes.While panko sits, prepare green beans. -
2 Prepare Green Beans and Make Meatloaves
Place green beans on one half of prepared baking sheet and toss with 2 tsp. olive oil. Spread into a single layer on one side.
After 2 minutes, add ground pork, pesto (use less if spice-averse), and onion salt to bowl with panko and combine thoroughly. Form into two evenly-sized loaves.Place loaves on empty half of baking sheet. -
3 Bake the Green Beans and Meatloaves
Bake green beans and meatloaves in hot oven until green beans are tender and meatloaves reach a minimum internal temperature of 160 degrees, 15-20 minutes.
Stir seasoning blend into baked green beans. Sheet will be hot! Use a utensil.While meatloaves and green beans bake, make crema. -
4 Make the Crema
Combine sour cream, guacamole, and a pinch of salt in another mixing bowl. Set aside.

5 Finish the Dish
Slice meatloaves, if desired.
Plate dish as pictured on front of card, topping green beans with tomato and cilantro and meatloaves with crema. Bon appétit!
