Prepare the Ingredients
Preheat oven to 400 degrees. Thoroughly rinse any fresh produce and pat dry.
Break broccoli into smaller pieces, if desired.
Add broccoli and peppers to provided tray and bake uncovered [CONDITION HERE?], 8 minutes. [CAN WE RANGE?]
Carefully remove from the oven and season vegetables with half the garlic salt (reserve remaining for meatloaves) and a pinch of salt and pepper. Push vegetables to one side of tray. Careful! Tray will be hot. Use a utensil!
Top vegetables with cheese.
Add the Meatloaves
Combine ground beef, panko, ricotta, and remaining garlic salt in a mixing bowl.
Form into two equally-sized loaves and place in empty side of tray.
Combine ketchup, brown sugar, and a pinch of salt in another mixing bowl.
Top meatloaves evenly with ketchup mixture.
Bake the Dish
Bake uncovered in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes. [CHECK TIME]
