Cooking Guidelines

    slice shallot quarter mushrooms

    cook the pasta

    bring 8 cups water with 2 t salt to a boil cook pasta 10-12 minutes until tender reserve 1 c pasta water

    make the sauce

    in a large non stick heat 2t oil over medium high heat add mushrooms and cook for 2 minutes undisturbed add ¼ t salt saute for 2 minutes remove from pan, add 2 t oil to pan and place back on same heat add steak strips and creole seasoning and ¼ t salt cook until browned add shallots, mushrooms cook for 2 minutes until shallots are tender add wine and reduce by ½

    finish the sauce

    add pasta with butter, mustard and ½ cup pasta water cook for 2-3 minutes until water reduces by ½ remove from heat and add sour cream stir until creamy add more pasta water if needed to adjust consistency
