quarter mushrooms -
cook the pasta
bring 8 cups water with 2 t salt to a boil
cook pasta 10-12 minutes until tenderreserve 1 c pasta water -
make the sauce
in a large non stick heat 2t oil over medium high heat
add mushrooms and cook for 2 minutes undisturbedadd 1/4 t salt saute for 2 minutesremove from pan, add 2 t oil to pan and place back on same heatadd steak strips and creole seasoning and 1/4 t saltcook until brownedadd shallots, mushrooms cook for 2 minutes until shallots are tenderadd wine and reduce by 1/2 -
finish the sauce
add pasta with butter, mustard and 1/2 cup pasta water
cook for 2-3 minutes until water reduces by 1/2remove from heat and add sour creamstir until creamyadd more pasta water if needed to adjust consistency
