Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    prep

    slice shallot

    quarter mushrooms

    cook the pasta

    bring 8 cups water with 2 t salt to a boil

    cook pasta 10-12 minutes until tender

    reserve 1 c pasta water

    make the sauce

    in a large non stick heat 2t oil over medium high heat

    add mushrooms and cook for 2 minutes undisturbed

    add 1/4 t salt saute for 2 minutes

    remove from pan, add 2 t oil to pan and place back on same heat

    add steak strips and creole seasoning and 1/4 t salt

    cook until browned

    add shallots, mushrooms cook for 2 minutes until shallots are tender

    add wine and reduce by 1/2

    finish the sauce

    add pasta with butter, mustard and 1/2 cup pasta water

    cook for 2-3 minutes until water reduces by 1/2

    remove from heat and add sour cream

    stir until creamy

    add more pasta water if needed to adjust consistency
