To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Potatoes
Peel and cut potatoes into large chunks.
Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander/strainer and return to pot.While potatoes cook, continue recipe. -
2 Prepare the Ingredients
Mince chives.
Place panko, cheese, and 1 tsp. olive oil on a plate. Stir to combine and spread into an even layer.Pat pork chops dry. Season both sides with half the onion salt (reserve remaining for mashed potatoes) and a pinch of pepper. -
3 Cook the Pork Chops
Evenly top one side of pork chops with mayonnaise. Transfer pork, mayonnaise-side down, onto plate with panko-cheese mixture, pressing gently to adhere to one side.
Place pork on prepared baking sheet, crusted-side up.Roast in hot oven until pork reaches a minimum internal temperature of 145 degrees, 12-14 minutes.Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner. Carefully remove from oven. Rest, 3 minutes.While pork roasts, continue recipe. -
4 Finish the Potatoes
Add sour cream, butter, a pinch of salt and pepper, remaining onion salt, and 2 Tbsp. reserved potato cooking water to pot with potatoes. Mash until combined.
If too thick, add additional reserved potato cooking water, 1 Tbsp. at a time, until desired consistency is reached.Stir in half the chives (reserve remaining for garnish) until combined. -
5 Finish the Dish
Plate dish as pictured on front of card, topping mashed potatoes with crispy onions and remaining chives. Bon appétit!
