Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Start the Vegetables

    Combine butternut squash and diced peppers in provided tray. Toss with half the fiesta seasoning (reserve remaining for meatloaves) and 1/4 tsp. salt. Push to one side of tray.

    Bake uncovered in hot oven, 20 minutes.

    While vegetables bake, continue recipe.

    Add the Meatloaves

    Finely crush crackers.

    Coarsely crush crispy onions.

    In a mixing bowl, combine crispy onions and shredded cheese. Set aside.

    In another mixing bowl, combine crackers, ground beef, remaining fiesta seasoning, half the mayonnaise (reserve remaining for topping), and garlic salt. Form meat mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.

    After 20 minutes, carefully remove tray from oven.

    Add meatloaves to empty side of tray and evenly top with remaining mayonnaise, then crispy onion mixture, pressing gently to adhere. Tray will be hot! Use caution.

    Finish the Meal

    Bake uncovered in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.

    While meal bakes, stem and tear cilantro.

    Carefully remove tray from oven.

    To serve, top meatloaf with chipotle crema. Garnish vegetables with cotija and cilantro. Bon appétit!
