Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Start the Orzo

    Once water is boiling, add orzo and cook until al dente, 4-5 minutes.

    Reserve 1/4 cup orzo cooking water. Drain in a wire-mesh strainer.

    While orzo cooks, continue recipe.

    Prepare the Ingredients

    Halve tomatoes.

    Halve lemon and juice.

    Stem dill and coarsely chop.

    Peel and mince shallot.

    Mince garlic.

    In a mixing bowl, combine crème fraîche, half the cheese (reserve remaining for garnish), 1 tsp. lemon juice (reserve remaining for orzo), and a pinch of salt and pepper. Mix until thoroughly combined.

    Cook the Shrimp

    Pat shrimp dry and season all over with a pinch of salt.

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Cook until pink and shrimp reach a minimum internal temperature of 145 degrees, 2-3 minutes per side.

    Remove from burner. Stir in half the butter (reserve remaining for orzo). Transfer shrimp to another mixing bowl. Wipe pan clean and reserve.

    Cook the Steaks

    Pat steaks dry and season both sides with chimichurri seasoning and 1/4 tsp. salt.

    Return pan used to cook shrimp to medium-high heat and add 2 tsp. olive oil.

    Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.

    Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Remove from burner. Transfer steaks to a plate. Rest, 3 minutes.

    Reserve pan; no need to wipe clean.

    While steaks rest, continue recipe.

    Finish Orzo and Finish Dish

    Return pan used to cook steaks to medium heat. Add 1 tsp. olive oil and shallots to hot pan. Stir occasionally until translucent, 30-60 seconds.

    Add garlic and tomatoes. Stir occasionally until tomatoes release juice, 1-2 minutes.

    Add half the shrimp (reserve remaining for topping), orzo, 1/4 cup reserved orzo cooking water, and remaining butter. Stir until combined and heated through, 1-2 minutes.

    Remove from burner. Stir in arugula and 2 tsp. remaining lemon juice.

    Plate dish as pictured on front of card, topping orzo with remaining shrimp, remaining cheese, and dill. Top steak with crème fraîche-cheese mixture. Bon appétit!
