1 Microwave Instructions
Thoroughly rinse any fresh produce and pat dry. Drain beans. Combine poblano, corn, beans, 1/4 tsp. salt, and 1 tsp. olive oil in provided tray. Cover tray with a damp paper towel. Microwave until pepper is tender, 3-5 minutes. Carefully remove tray from microwave. Combine enchilada sauce, chicken base, and flour in a mixing bowl. Break up pork and add pork, seasoning blend, 1 cup water, and enchilada sauce mixture over vegetables. Stir to combine. Microwave again uncovered until bubbling and sauce has thickened enough to coat the back of a spoon, 2-3 minutes. Carefully remove from microwave. To serve, top with sour cream and cheese. 2 Oven Instructions
Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Drain beans. Combine poblano, corn, beans, 1/4 tsp. salt, and 1 tsp. olive oil in provided tray. Place tray on baking sheet. Bake uncovered in hot oven until pepper is tender, 10-15 minutes. Carefully remove tray from oven. Combine enchilada sauce, chicken base, and flour in a mixing bowl. Break up pork and add pork, seasoning blend, 1 cup water, and enchilada sauce mixture over vegetables. Stir to combine. Bake again uncovered in hot oven until bubbling and sauce has thickened enough to coat the back of a spoon, 15-17 minutes. Carefully remove from oven. To serve, top with sour cream and cheese.
