Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start Potatoes, Prepare Ingredients, and Make Horseradish Aioli
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Prick potatoes all over with a fork. Place potatoes and 1 Tbsp. water in a microwave-safe bowl. Microwave until fork-tender, 2-3 minutes.If potatoes are longer than 2", microwave 4-5 minutes.While potatoes microwave, trim and thinly slice green onions, keeping white and green portions separate.In a mixing bowl, combine mayonnaise and horseradish (to taste).Pat steaks dry and season both sides with 1/4 tsp. salt and garlic pepper. -
2 Bake Potatoes and Make Crema
Spray provided tray with cooking spray. Combine potatoes, white portions of green onions, 2 tsp. olive oil, and half the buttermilk-dill seasoning (reserve remaining for crema) in tray.
Bake uncovered in hot oven, 15 minutes.In another mixing bowl, combine sour cream and remaining buttermilk-dill seasoning. Set aside.While potatoes bake, continue recipe. -
3 Add Steaks and Bake Meal
Place a medium non-stick pan over medium-high heat. Add 2 tsp. olive oil and steaks to hot pan. Sear undisturbed until browned, 2-3 minutes per side.
Remove from burner. Carefully remove tray from oven and push potatoes to one side. Potatoes will be hot! Use a utensil.Transfer steaks to now-empty side of tray. Top steaks evenly with horseradish aioli (to taste), cheese, and crispy onions.Bake uncovered in hot oven until steaks reach a minimum internal temperature of 145 degrees, 6-9 minutes.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Carefully remove from oven. Rest, 3 minutes.To serve, slice steak, if desired, and top potatoes with crema and green portions of green onions. Bon appétit!
