If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using top round steak, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 3-5 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare Ingredients and Make Pimiento Topping
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
In a mixing bowl, combine softened cream cheese, pesto, shredded cheese, and a pinch of salt and pepper. Set aside. Kids want to help? With supervision, have them help prepare the pimiento topping.Pat chicken dry and season both sides with 1/4 tsp. salt and a pinch of pepper. -
2 Roast the Chicken
Place chicken on prepared baking sheet and evenly top with pimiento topping.
Roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes. Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While chicken roasts, continue recipe. -
3 Cook the Carrots
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add carrots, brown sugar, garlic salt, and 1/4 cup water to hot pan. Stir to combine and bring to a simmer.Alternatively, reserve half the raw carrots for snacking/serving on the side.Once simmering, cover and cook until water is mostly evaporated and carrots are tender, 3-5 minutes.Uncover and stir often until carrots are coated, 1-2 minutes.Remove from burner.While carrots cook, continue recipe. -
4 Make the Corn Cake Batter
In another mixing bowl, combine corn muffin mix, 1/4 tsp. salt, a pinch of pepper, 3/4 cup water, and sour cream. Stir until mixture reaches the consistency of pancake batter.
If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached. -
5 Cook Corn Cakes and Finish Dish
Place another large non-stick pan over medium heat and add 1 Tbsp. olive oil.
Working in batches, add 1/4 cup corn cake batter to hot pan and evenly top with bacon.Cook until corn cakes are slightly browned and cooked all the way through, 2-3 minutes per side.Remove from burner.Plate dish as pictured on front of card, slicing chicken, if desired. Bon appétit!
