Meatloaf may be thought of as basic and ordinary. (We don't think so; the loaf of meat is a classic foodstuff of dinner tables from our childhood and beyond.) But not this meal; moist ground beef loaves get infused with Asian seasoning of ginger, garlic, and chile heat and topped with spicy good Korean BBQ sauce. Not basic, not ordinary…. Simply outstanding.

1 Prepare the Ingredients
Cut broccoli into bite-sized pieces.
Stem mushrooms. If caps are larger than 1" in diameter, halve or quarter into smaller pieces. In a mixing bowl, coat mushrooms completely with cornstarch, shaking off any excess.Finely crush saltines into crumbs. -
2 Make and Bake the Meatloaves
In another mixing bowl, combine ground beef, seasoning blend, cracker crumbs, mayonnaise, and 1/4 tsp. salt until combined and smooth.
Form ground beef mixture into two evenly-sized football-shaped ovals. Transfer to prepared baking sheet.Bake in hot oven until meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.While meatloaves bake, cook broccoli. -
3 Cook the Broccoli
Place a medium non-stick pan over medium heat and add 1 Tbsp. olive oil.
Add broccoli and 1 Tbsp. water to hot pan. Cover, and cook until water is almost completely evaporated, 5-6 minutes.Uncover, and stir occasionally until tender, 2-3 minutes.Season with 1/4 tsp. salt and a pinch of pepper and remove from burner. Remove broccoli to a plate and tent with foil. Wipe pan clean and reserve. -
4 Fry the Mushrooms
Line a plate with a paper towel.
Return pan used to cook broccoli to medium-high heat.Add 4 tsp. olive oil, then mushrooms to hot pan, placing mushrooms in an even layer. Do not crowd pan; work in batches, replenishing oil with additional 3 tsp., if necessary. Gently stir often until mushrooms are golden brown and crispy, 6-7 minutes.Carefully remove mushrooms to towel-lined plate and season with a pinch of salt. -
5 Sauce Meatloaves and Finish Dish
Carefully remove baking sheet from hot oven. Top meatloaves evenly with half the BBQ sauce (use less if spice-averse). Bake again until sauce is warmed through, 5-6 minutes.
Plate dish as pictured on front of card, topping meatloaves with remaining BBQ sauce (to taste). Garnish broccoli with crispy mushrooms. Bon appétit!
