What is saltimbocca? First, it's an awesome word. But culinary wise, classically, it's a veal preparation wrapped in prosciutto and sage. That's classically; we're modern here. Instead, we've got pasta with the sage, prosciutto, but also a hint of fresh lemon, nutty Parmesan, and sweet green peas. Awesome, modern, delicious; it's the Home Chef way.

Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Ingredients
Remove prosciutto from refrigerator. Place prosciutto on a microwave-safe plate. Microwave until darkened and slightly crispy, 2-3 minutes.
Once cool enough to handle, break into bite-size pieces. Divide in half and set aside.While prosciutto crisps, tear sage into small pieces.Halve lemon. Cut one half into wedges and juice other half.Mince garlic. -
2 Make the Sauce
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add garlic to hot pan and cook, 30 seconds.Add flour and stir until no dry flour remains.Stir in sage, chicken base, cream cheese, 1 cup water, and a pinch of salt. Bring to a simmer.Once simmering, stir occasionally until combined, slightly thickened, and cream cheese has melted, 1-2 minutes. -
3 Add the Pasta
Stir pasta into hot pan until coated in sauce. Cover, and stir occasionally until pasta is warmed through, 1-2 minutes.

4 Finish Pasta and Finish Dish
Add peas and half the prosciutto (reserve remaining for garnish) to hot pan. Stir occasionally until thoroughly combined and peas are bright green, 1-2 minutes.
If too dry, add water, 1 Tbsp. at a time and up to 1/4 cup, until desired consistency is reached. Remove from burner. Stir in 1 Tbsp. lemon juice until combined. Taste, and add a pinch of salt, if desired.Plate dish as pictured on front of card, garnishing with remaining prosciutto and Parmesan. Squeeze lemon wedges over dish to taste. Bon appétit!
