A note about serious food allergies

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using 20 oz. ground pork, follow same instructions as 10 oz. ground pork, working in batches if necessary.

  • If using diced chicken breasts, pat dry. Follow same instructions as ground pork in Step 2, stirring occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using ground beef, follow same instructions as ground pork in Step 2, breaking up meat until beef reaches minimum internal temperature, 4-6 minutes.

  • If using ground turkey, follow same instructions as ground pork in Step 2, breaking up until turkey reaches minimum internal temperature, 7-9 minutes.

    Prepare the Ingredients

    Cut potatoes into 1/2" dice.

    Trim and thinly slice green onions, keeping white and green portions separate.

    Cook the Ground Pork

    Place a medium pot over medium-high heat and add 2 tsp. olive oil. Add ground pork to hot pot and cook undisturbed until starting to brown, 3-4 minutes.

    Stir in chipotle seasoning (use less if spice-averse) and onion salt. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 2-3 minutes.

    Transfer pork to a plate. Keep pot over medium-high heat.

    Start the Stew

    Add 1 tsp. olive oil, corn, and white portions of green onions to hot pot. Stir occasionally until softened, 1-2 minutes.

    Add potatoes, ground pork, 13/4 cups water, demi-glace, and a pinch of pepper. Bring to a simmer.

    Once simmering, reduce heat to medium. Cover and stir occasionally until potatoes are tender, 12-14 minutes.

    Finish the Stew

    In a mixing bowl, combine cornstarch and 2 Tbsp. water.

    Add cornstarch-water mixture to hot pot. Stir until stew thickens slightly, 1-2 minutes.

    Remove from burner and stir in sour cream and a pinch of salt until completely combined.

    Finish the Dish

    Plate dish as pictured on front of card, garnishing stew with cheese and green portions of green onions. Bon appétit!
