Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Ingredients
Place potatoes and 1 Tbsp. water in a microwave-safe bowl. Cover with a damp paper towel.
Microwave covered until tender, 3-5 minutes.While potatoes microwave, mince red peppers.Peel and mince shallot.Carefully remove potatoes from microwave. Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick. -
2 Assemble the Potatoes and Meatloaves
Place potatoes on one side of prepared baking sheet. Spray with cooking spray and evenly top with 1/4 tsp. salt and 1/4 tsp. pepper. Massage oil and seasonings into potatoes and spread into an even layer on their side.
In a mixing bowl, combine ground beef, panko, red peppers, 1/4 tsp. salt, and 1 Tbsp. shallots (remaining are yours to use as you please!). Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.Place meatloaves on empty side of sheet. -
3 Roast the Potatoes and Meatloaves
Roast in hot oven until potatoes are browned and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove from oven. Evenly top potatoes with cheese and let melt.While potatoes and meatloaves roast, continue recipe. -
4 Crisp Bacon and Finish Dish
Line a microwave-safe plate with a paper towel. Spread bacon evenly on towel-lined plate.
Microwave until crispy, 1-2 minutes.Carefully remove from microwave.To serve, top potatoes with bacon and sour cream. Bon appétit!
