Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    Prepare the Ingredients

    Place potatoes and 1 Tbsp. water in a microwave-safe bowl. Cover with a damp paper towel.

    Microwave covered until tender, 3-5 minutes.

    While potatoes microwave, mince red peppers.

    Peel and mince shallot.

    Carefully remove potatoes from microwave. Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick.

    Assemble the Potatoes and Meatloaves

    Place potatoes on one side of prepared baking sheet. Spray with cooking spray and evenly top with 1/4 tsp. salt and 1/4 tsp. pepper. Massage oil and seasonings into potatoes and spread into an even layer on their side.

    In a mixing bowl, combine ground beef, panko, red peppers, 1/4 tsp. salt, and 1 Tbsp. shallots (remaining are yours to use as you please!). Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.

    Place meatloaves on empty side of sheet.

    Roast the Potatoes and Meatloaves

    Roast in hot oven until potatoes are browned and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.

    Carefully remove from oven. Evenly top potatoes with cheese and let melt.

    While potatoes and meatloaves roast, continue recipe.

    Crisp Bacon and Finish Dish

    Line a microwave-safe plate with a paper towel. Spread bacon evenly on towel-lined plate.

    Microwave until crispy, 1-2 minutes.

    Carefully remove from microwave.

    To serve, top potatoes with bacon and sour cream. Bon appétit!
