If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Start the Potatoes and Pepperoni
Cut potatoes into 1/4" rounds.
In a mixing bowl, combine potatoes, 2 tsp. olive oil, Italian seasoning, 1/4 tsp. salt, a pinch of pepper, and half the grated cheese (reserve remaining for chicken).Shingle potatoes and pepperoni on one half of prepared baking sheet.Roast in hot oven, 10 minutes.While potatoes and pepperoni roast, continue recipe. -
2 Prepare the Ingredients
Finely crush croutons.
In another mixing bowl, combine croutons, remaining grated cheese, and 1 tsp. olive oil. Set aside.Pat chicken dry. Season both sides with garlic pepper and a pinch of salt. -
3 Finish the Chicken, Potatoes, and Pepperoni
After 10 minutes, carefully remove sheet from oven and evenly top potato-pepperoni mixture with shredded cheese. Sheet will be hot! Use caution.
Place chicken on empty side of sheet and evenly top with pesto, then crouton mixture, pressing gently to adhere. Sheet will be hot! Use a utensil.Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While dish roasts, continue recipe. -
4 Heat Sauce and Finish Dish
Place marinara in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until heated through, 30-60 seconds.Carefully remove from microwave.To serve, top chicken with sauce. Garnish potato-pepperoni mixture with red pepper flakes (to taste). Bon appétit!
