If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

1 Prepare the Carrots
Place carrots on prepared baking sheet and top with 1 tsp. olive oil, citrus mojo rub, and half the garlic salt (reserve remaining for meatloaves).
Massage oil and seasonings into carrots. Spread into an even layer on one half of sheet. -
2 Add the Meatloaves
In a mixing bowl, thoroughly combine ground pork, amarillo seasoning, remaining garlic salt, and panko. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.
Place on empty side of baking sheet and top with 1 tsp. olive oil. -
3 Roast the Meatloaves and Carrots
Roast in hot oven until carrots are tender and meatloaves reach a minimum internal temperature of 160 degrees, 25-30 minutes.
Carefully remove sheet from oven.While carrots and meatloaves roast, continue recipe. -
4 Make Queso and Finish Dish
In a microwave-safe bowl, combine cream cheese, 3 Tbsp. water, and half the piri piri seasoning (to taste; remaining is yours to use as you please!).
Microwave uncovered until cream cheese is melted, 60-90 seconds.Carefully remove from microwave. Add shredded cheese and microwave again uncovered until shredded cheese is melted, 60-90 seconds.Carefully remove from microwave. Stir until smooth. If sauce is too thick, add water, 1 tsp. at a time, until desired consistency is reached.To serve, top meatloaf with queso (to taste). Bon appétit!
