If using chicken thighs, follow same instructions as shrimp in Steps 1 and 2, baking uncovered in hot oven until chicken reaches minimum internal temperature, 28-30 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using diced chicken breast, follow same instructions as shrimp in Steps 1 and 2, baking uncovered in hot oven until chicken reaches minimum internal temperature, 20-25 minutes.

Prepare the Ingredients
Preheat oven to 425 degrees. Spray provided tray with cooking spray.
Drain black beans. Add 1/3 cup black beans (remaining are yours to use as you please!) and corn to provided tray and stir until coated. Pat shrimp dry. Add to tray in an even layer. Top evenly with seasoning blend and 2 tsp. olive oil. -
Bake the Meal
Bake uncovered in hot oven until shrimp reaches a minimum internal temperature of 145 degrees, 18-20 minutes.
While meal bakes, poke tortillas with a fork all over, 10 times for each tortilla. Top with 1 tsp. olive oil.Place tortillas directly on oven rack in a single layer and bake until golden brown and crisp, 5-7 minutes.Carefully remove tortillas and tray from oven. Oven and tortillas will be hot! Use an oven mitt.While meal bakes, prepare sauces. -
Make Sauces and Finish Dish
In a mixing bowl, combine salsa verde and guacamole. Set aside.
In another mixing bowl, combine sour cream, 2 tsp. water, and a pinch of salt until smooth. Set aside.Top tortillas with an even layer of salsa verde-guacamole mixture, then top with shrimp and vegetables, sour cream mixture, cheese, and hot sauce (to taste). Bon appétit!
