Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Filling
Turn oven on to 425 degrees. Let preheat, at least 15 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided trays with cooking spray.
Pat chicken dry. Divide chicken evenly between both trays. Top with pepper and onion mix, 1 tsp. olive oil, fajita seasoning, and a pinch of salt.Bake uncovered in hot oven, 10 minutes. -
2 Make Corn and Warm Tortillas
While filling bakes, stem cilantro, reserving whole leaves.
Place corn in a microwave safe bowl. Microwave until warmed through, 2-3 minutes. Stir chipotle crema (to taste), half the cotija (reserve remaining for garnish), a pinch of salt, and cilantro (reserve a pinch for garnish) into bowl with corn. Set aside.Wrap tortillas in damp paper towel and microwave until warmed through, 30-60 seconds. -
3 Finish Filling and Finish Meal
Carefully remove trays from oven. Stir filling, breaking up any stuck pieces, and top with enchilada sauce. Trays will be hot! Use a utensil.
Bake again uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes. Carefully remove trays from oven. Top with mozzarella.Fill tortillas with filling. Garnish corn with remaining cotija and remaining cilantro. Bon appétit!
