Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Prepare the Ingredients
Preheat oven to 425 degrees. When ingredient appears in recipe, remove from packaging. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.
Combine corn, diced peppers, zucchini, 2 tsp. olive oil, and 1/4 tsp. salt in provided tray. Push to one side. -
Add the Meatballs
Finely crush crackers.
Combine ground turkey, crushed crackers, mayonnaise, and onion salt in a mixing bowl. Form turkey mixture into six golf ball-sized meatballs. Place meatballs in empty side of tray and drizzle with 1 tsp. olive oil.If using ground beef, or Impossible Burger, follow same instructions. -
Bake the Dish
Bake uncovered in hot oven until ground turkey reaches a minimum internal temperature of 165 degrees, 30-35 minutes.
If using ground beef, follow same instructions until meatballs reach a minimum internal temperature of 160 degrees, 25-30 minutes. If using Impossible Burger, bake uncovered until meatballs are heated through, 25-30 minutes.Carefully remove from oven. Transfer meatballs to a plate and rest, 3 minutes.Top vegetables with goat cheese (crumbling with your hands if needed) and crispy onions. Top meatballs with BBQ sauce. Bon appétit!
