Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using whole chicken breasts, pat dry, and on a separate cutting board, cut into 1" dice. Follow same instructions as diced chicken.

  • If using shrimp, follow same instructions as diced chicken in Steps 1 and 3, stirring occasionally until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

    Cook the Chicken

    Pat chicken dry.

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add chicken to hot pan and stir occasionally until lightly browned, 3-4 minutes.

    Stir in taco seasoning. Chicken will finish cooking in a later step.

    While chicken cooks, continue recipe.

    Prepare Ingredients and Make Dressing

    Separate leaves of lettuce for cups. To re-crisp lettuce cups, soak in icy, cold water, 5 minutes. Thoroughly dry.

    You should have about 5-6 cups total. Layer two lettuce cups for extra crunch and structural support. Lettuce cups are a delicious but messy meal. For this recipe, they can easily be converted to a salad. Simply chop romaine and top with filling after completing steps.

    Mince garlic.

    Drain black beans in a wire-mesh strainer and rinse.

    Combine half the garlic (reserve remaining for chicken), half the Parmesan (reserve remaining for garnish), mayonnaise, vinegar, 1 tsp. water, and a pinch of salt and pepper in a mixing bowl. Set aside.

    Finish the Chicken

    Add black beans, corn, and remaining garlic to hot pan with chicken. Stir occasionally until chicken reaches a minimum internal temperature of 165 degrees, 3-4 minutes.

    Remove from burner.

    Finish the Dish

    Plate dish as pictured on front of card, filling lettuce cups with chicken mixture, dressing, remaining Parmesan, and tortilla strips. Bon appétit!
