Cook the Turkey
Stem jalapeño, halve, seed, remove ribs, and mince. Wash hands and cutting board after working with jalapeño.
Heat 1 tsp. olive oil in a medium non-stick pan over medium-high heat. Add ground turkey and jalapeño (to taste) to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.Remove from burner.While turkey cooks, prepare salad. -
Make the Salad
Halve tomatoes.
Quarter apples and remove cores. Cut into 1/2" slices.Stem, seed, remove ribs, and cut red bell pepper into 1" dice.Halve lime and juice.In a mixing bowl, combine spinach, tomatoes, red bell pepper, 2 Tbsp. lime juice, and a pinch of salt.Plate dish as pictured on front of card, topping salad with ground turkey and cheese and serving apple slices on the side.
