Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare the Ingredients
Drain beans.
Halve and peel onion. Cut halves into 1/4" dice.Stem poblano pepper, seed, and cut into 1/4" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping. -
2 Start the Chili
Place a medium pot over medium-high heat and add 1 tsp. olive oil.
Add ground pork, onions, 1/4 tsp. salt, and poblanos (use less if spice-averse) to hot pot. Stir occasionally until vegetables are lightly charred and pork begins to brown, 4-6 minutes. -
3 Finish the Chili
Carefully drain excess grease from pot. Add bacon, chipotle paste (use less if spice-averse), crushed tomatoes, beans, chili powder, 1/4 cup water, 1/2 tsp. salt, and a pinch of pepper to hot pot. Bring to a simmer.
Once simmering, stir occasionally until pork reaches a minimum internal temperature of 160 degrees, 6-8 minutes.Remove from burner. -
4 Finish the Dish
