If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare the Zucchini
Trim zucchini ends, halve lengthwise, and cut into 1/2" slices on an angle. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.

2 Prepare the Chicken
Place panko on a plate and spread into an even layer.
Pat chicken dry and season both sides with garlic pepper and a pinch of salt.Top chicken with mayonnaise and spread into an even layer on both sides. Place chicken onto plate with panko, flipping to coat both sides, pressing gently to adhere. -
3 Cook the Chicken
Place chicken in air fryer basket and generously spray with cooking spray. Air fry at 400 degrees, 8 minutes.
Flip chicken and evenly top with marinara, mozzarella, and half the Parmesan (reserve remaining for garnish). Air fry again until cheese melts and chicken reaches a minimum internal temperature of 165 degrees, 4-6 minutes.Alternatively, place a medium non-stick pan over medium heat and add 1 Tbsp. olive oil. Add chicken to hot pan. Cook undisturbed until browned on one side, 3-5 minutes.Flip and top with marinara, mozzarella, and half the Parmesan (reserve remaining for garnish). Cover and cook until chicken reaches a minimum internal temperature of 165 degrees, 2-3 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.While chicken cooks, continue recipe. -
4 Cook Zucchini and Finish Dish
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add zucchini to hot pan and stir occasionally until lightly browned and tender, 6-8 minutes.If pan becomes dry, add water, 1 Tbsp. at a time, as needed.Add pesto, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir to combine. Remove from burner.Plate dish as pictured on front of card, topping zucchini with remaining Parmesan. Bon appétit!
