Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Potatoes
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
In provided tray, combine potatoes, 4 tsp. olive oil, barbeque seasoning (to taste), 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer.Bake uncovered in hot oven, 25 minutes.While potatoes bake, continue recipe. -
2 Make Glaze and Add Chicken
Pat chicken dry and season both sides with garlic pepper.
In a mixing bowl, combine pesto (to taste), apricot preserves, and mustard. Set aside.After 25 minutes, carefully remove tray from oven.Push potatoes to one side of tray. Tray will be hot! Use a utensil.Place chicken in now-empty side of tray and top evenly with glaze (use less if spice-averse). -
3 Bake Meal and Make Crema
Bake again uncovered in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
While meal bakes, in another mixing bowl, combine sour cream and buttermilk-dill seasoning. Set aside.If too thick, add water, 1 tsp. at a time, until desired consistency is reached. Carefully remove tray from oven.To serve, top potatoes with crema and crispy red peppers. Bon appétit!
