Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Start the Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Prick tomatoes with a fork.In provided tray, combine tomatoes, peppers, garlic and parsley seasoning, and 2 tsp. olive oil. Massage oil and seasonings into vegetables. Spread into an even layer.Bake uncovered in hot oven until vegetables are slightly tender, 10-12 minutes. -
2 Add the Tortellini
Carefully remove tray from oven. Add tortellini, mirepoix base, 1/4 cup water, and 1/4 tsp. salt to vegetables. Stir to combine. Tray will be hot! Use a utensil.
Cover tray with foil. -
3 Bake the Meal
Bake covered in hot oven until vegetables are tender, sauce is bubbling, and tortellini are heated through, 22-25 minutes.
Carefully remove tray from oven. Stir butter, lemon juice, half the chimichurri, and half the cheese (reserve remaining of both for garnish) into tortellini until combined. Tray will be hot! Use a utensil.To serve, garnish with remaining chimichurri and cheese. Bon appetit!
