Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground beef, follow same instructions as ground pork in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

If using ground turkey, follow same instructions as ground pork in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Start the Broccoli
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.
Combine broccoli, 2 tsp. olive oil, garlic salt, and a pinch of pepper in provided tray. Massage oil and seasoning into broccoli. Cover with foil. Bake covered in hot oven until starting to soften, 10-15 minutes.While broccoli bakes, continue recipe. -
2 Add the Meatballs
Combine ground pork, panko, 1/4 tsp. salt, chipotle seasoning (use less if spice-averse), and pesto (use less if spice-averse) in a mixing bowl. Form mixture into 6 evenly-sized meatballs.
After 10-15 minutes, carefully remove broccoli from oven and uncover. Push broccoli to one side and top with cheese. Add meatballs to now-empty side of tray. Top with enchilada sauce and pineapple. -
3 Bake the Meal
Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 20-22 minutes.
Carefully remove from oven.To serve, top meatballs with sauce from tray. Bon appétit!
