Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Ingredients
Halve lime. Cut one half into wedges and juice the other half.
Stem and tear cilantro leaves.Drain brisket and separate slices. -
2 Prepare the Filling
Add corn to one half of provided tray.
In empty side of tray, combine brisket, BBQ sauce, preserves, and 1 tsp. water. Cover tray with foil.Bake covered in hot oven until brisket and corn are heated through, 10-15 minutes.While filling bakes, continue recipe. -
3 Warm Tortillas and Finish Meal
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until warm, 30-60 seconds.
Carefully remove from microwave.Carefully remove tray from oven. Add cilantro, 1 Tbsp. lime juice, sour cream, and a pinch of salt and pepper to corn. Stir to combine.To serve, fill tortillas with brisket mixture and corn elotes salad. Garnish with cheese and crispy jalapeños (to taste). Squeeze lime wedges over to taste. Bon appétit!
