We're far beyond the era of "burgers must be meat!" but still, most of our local veggie burgers are in a meat-shaped form. But it doesn't need to be! And here, black bean and corn mix to provide a thick and delicious patty, full of flavor. The patty gets further love from melty cheese and tangy aioli. It doesn't have to be meat, and sometimes, it's even better when it's not.

1 Roast The Potatoes
Halve potatoes lengthwise. Toss fingerling potatoes with 2 tsp. olive oil, half the garlic salt, and a pinch of pepper on prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 18-20 minutes.. While potatoes roast, prepare the ingredients.

2 Prepare The Ingredients
Peel and mince shallot. Add mayo and pesto to a small bowl until completely combined. Set aside.

3 Make The Filling
In a large non-stick pan over medium high heat, add 1 tsp olive oil, corn, shallot, and a pinch of salt and pepper. Cook, stirring occasionally, until tender and lightly browned. Transfer to a mixing bowl. Reserve pan; no need to wipe clean, Add black beans, flour, ⅓ of the cheese (reserve remaining for topping), and remaining garlic salt. Mash to combine. Form mixture into two patties, 5" in diameter.

4 Cook The Patties
In the same pan over medium high heat, add 5 tsp olive oil. Add patties to hot pan and cook, undisturbed, until browned on one side, 5-7 minutes. Flip patties and cook for 2-3 minutes. Top with remaining mozzarella cheese. Cover and cook until patties are browned and cheese is melted, 2-3 minutes. Transfer patties to a plate. Reserve pan; no need to wipe clean.

5 Toast The Buns and Finish The Dish
In the same pan over low heat, place bread cut side down. Toast bread until lightly toasted, 2-3 minutes. Spread pesto mixture evenly on bottom buns,. Top with patty and top bun. Plate dish as pictured on front of card. Bon appétit!
