Corn fritters sound like a snack, but these hearty broccoli corn fritters eat like a meal. You’ll cook broccoli and then mash it together with corn kernels, egg, and plenty of parmesan and pan fry them to golden brown. The fritters are served with a mouthwateringly good red pepper and shallot relish and a side of chive sour cream for a cool, crunchy, and savory meal.

    Prepare Ingredients and Make Broccoli Slaw

    Thoroughly rinse produce and pat dry. Chop broccoli florets into penny-sized pieces. Dice red pepper into ½" pieces. Mince chives. In medium mixing bowl, whisk together half of red wine vinegar, half of sugar, and a pinch of salt and pepper. Add broccoli slaw and toss to combine. Cover with plastic wrap and keep in refrigerator until ready to serve.

    Steam Broccoli and Corn

    Heat a medium pan over medium-high heat. Put a colander in the sink. Add broccoli, corn kernels, ½ cup water, and a pinch of salt and pepper. When steam begins to rise, cover pan and steam broccoli 4 minutes until bright green and tender. Drain in a colander and let cool slightly in a mixing bowl.

    Heat 1 tsp. olive oil in a medium pot over medium-high heat. Add diced peppers and cook until softened, about 6-8 minutes. Add remaining red wine vinegar, remaining sugar, and ½ cup water. Simmer until mixture is thickened, about 8 minutes. Set aside.

    Lightly mash broccoli florets and corn with a potato masher or fork. Add egg, grated parmesan, and rice flour to bowl. Season with a pinch of salt and pepper and stir mixture to combine ingredients. Mixture should be stiff and sticky.

    Cook the Fritters

    Heat 2 tsp. olive oil in a medium pan over medium-high heat. Using a ⅓ cup measure, add fritter batter to pan and press down to form a 3" patty. You will get 8 fritters. Working in batches if necessary, cook fritters until browned on both sides, about 6 minutes total. Remove to a paper towel-lined plate and prepare to serve.

  • Step 6 - Plate the Dish

    Plate the Dish

    Serve fritters atop a bed of red pepper relish. Mix minced chives with sour cream and serve a dollop atop the fritters. Serve broccoli slaw on the side.
