Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

Bake the Sweet Potatoes
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Combine sweet potatoes, 2 tsp. olive oil, and a pinch of salt in provided tray. Spread into a single layer.Bake uncovered in hot oven, 15 minutes. -
Add the Chicken
Carefully remove tray from oven. Stir in poblano, onion, fajita seasoning, and 1 tsp. olive oil. Push vegetables to one side. Tray will be hot! Use a utensil.
Coarsely crush crackers.Pat chicken dry. Place chicken in empty side of tray and top with a pinch of salt, BBQ spice rub, cheese, and crushed crackers. -
Bake the Meal
Bake uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
Carefully remove tray from oven.To serve, top vegetables with dressing (to taste) and crispy red peppers. Bon appétit!
