slice green onion, operate greens and whitehalve cherry tomatoesmince garlic -
2 cooking the pasta
bring 8 cups water to a boil with 2 t salt
cook pasta for 10-12 minutes until al dentestrain and reserve 1 C pasta water -
3 making the sauce
in a large non stick over medium high heat add 2 t olive oil
sear shrimp w/ 1/4 t salt , remove from panadd 2 t olive oil and mushrooms to pan and saute for 3-4 minutesadd garlic, cajun seasoning and white part of green onion sweat for 1-2 minutes on medium heatadd shrimp back to pan with pasta, tomatoes and 1/2 cup of pasta wateradd butter and cheese and stir in to meltremove from heat and add sour cream and green part of onions
