Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Rub corn with 1 tsp oil and ¼ tsp salt. Place on grill. Give corn a quarter turn every 3-5 minutes until corn is tender and has grill marks all over.
Make the burgers
Combine ground beef, seasoning blend, half the mozzarella cheese, ¼ tsp salt, and a pinch of pepper. Form burgers into 2 equally sized patties and drizzle with 1 tsp oil. Add patties to hot grill. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side. Place remaining mozzarella cheese on burgers after flipping.
Toast buns and plate
Add buns cut side down on grill and cook until toasted about 1 minutes.
Spread Chipotle aioli on bottom bun. Place patties on bottom bun and top with Guacamole and pickled onions.
