To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using diced chicken thighs, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

1 Start the Chicken and Leeks
Pat chicken dry.
Combine chicken and leeks in provided tray and toss with 1 tsp. olive oil and a pinch of pepper. Spread into an even layer.Bake uncovered in hot oven, 15 minutes.Chicken will finish cooking in a later step.While chicken and leeks bake, continue recipe. -
2 Add the Cornbread Batter
In a mixing bowl, combine corn muffin mix, half the cheese (reserve remaining for topping), and 1/4 cup water. Stir until a thick batter forms. If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.
After 15 minutes, carefully remove tray from oven and drain any excess liquid. Stir corn, bacon, chicken base, cream base, Chesapeake seasoning, flour, 1 cup water, and a pinch of salt and pepper into tray until combined.Top with 5-7 corn muffin batter dollops, evenly spaced. -
3 Finish the Meal
Bake uncovered in hot oven until cornbread is golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 22-27 minutes.
Carefully remove from oven. Bon appétit!
