If using ground beef, follow same instructions as ground pork in Steps 2 and 3, baking uncovered in hot oven until beef reaches minimum internal temperature, 20-25 minutes.

If using Impossible burger, follow same instructions as ground pork in Steps 2 and 3, baking uncovered in hot oven until heated through, 20-25 minutes.

Prepare the Ingredients
Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry.
Combine broccoli, 1/4 tsp. salt, and 1 tsp. olive oil in provided tray.Bake uncovered in hot oven, 10 minutes. -
Add the Meatballs
Finely crush saltines.
Mix ground pork, saltines, mayonnaise, garlic salt, and a pinch of pepper in a mixing bowl until completely combined. Form into six equally-sized meatballs.Carefully remove tray from oven. Stir in corn and push to one side of tray. Tray will be hot! Use a utensil.Add meatballs to empty side of tray. -
Finish the Dish
Bake uncovered in hot oven until broccoli is tender and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, combine BBQ sauce, ketchup, 2 Tbsp. water, a pinch of salt, and chipotle pepper paste (to taste) in a microwave-safe bowl and microwave until warm, 30-60 seconds.Carefully remove tray from oven and stir half the cheese into vegetables. Top vegetables with remaining cheese and top meatballs with BBQ sauce mixture. Bon appétit!
