If using ground pork, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

If using ground turkey, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

Start the Broccoli
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
In provided tray, combine broccoli, 2 tsp. olive oil, and garlic salt. Spread into an even layer and cover with foil.Bake covered in hot oven, 10 minutes.While broccoli bakes, continue recipe. -
Add the Meatballs
In a mixing bowl, combine chipotle seasoning, chipotle pesto (use less of both if spice-averse), ground beef, panko, and 1/4 tsp. salt. Form mixture into 6 evenly-sized meatballs.
Carefully remove tray from oven.Remove foil and push broccoli to one side of tray.Place meatballs in now-empty side of tray. Top broccoli with cheese. Tray will be hot! Use a utensil. -
Bake the Meal
Bake again uncovered in hot oven until broccoli is fork-tender and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Place enchilada sauce in a microwave-safe bowl. Microwave until heated through, 30-60 seconds.Carefully remove tray from oven and bowl from microwave.To serve, top meatballs with enchilada sauce, sour cream, and tortilla strips. Bon appétit!
