Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground pork, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

  • If using ground turkey, follow same instructions as ground beef in Steps 2 and 3, baking uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

    Start the Broccoli

    Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.

    In provided tray, combine broccoli, 2 tsp. olive oil, and garlic salt. Spread into an even layer and cover with foil.

    Bake covered in hot oven, 10 minutes.

    While broccoli bakes, continue recipe.

    Add the Meatballs

    In a mixing bowl, combine chipotle seasoning, chipotle pesto (use less of both if spice-averse), ground beef, panko, and 1/4 tsp. salt. Form mixture into 6 evenly-sized meatballs.

    Carefully remove tray from oven.

    Remove foil and push broccoli to one side of tray.

    Place meatballs in now-empty side of tray. Top broccoli with cheese. Tray will be hot! Use a utensil.

    Bake the Meal

    Bake again uncovered in hot oven until broccoli is fork-tender and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.

    Place enchilada sauce in a microwave-safe bowl. Microwave until heated through, 30-60 seconds.

    Carefully remove tray from oven and bowl from microwave.

    To serve, top meatballs with enchilada sauce, sour cream, and tortilla strips. Bon appétit!
