Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Cut cauliflower into bite sized peices if desired.
Thoroughly combine ground beef, ricotta, panko, ½ tsp salt and a pinch of pepper. in a mixing bowl. Form mixture into two equally-sized ovals.
place meatloaves on one side of a prepared baking sheet.
bake in a hot oven for 7-9 minutes.
while meatloaves are in the oven prepare cauliflower.
In a bowl combine cauliflower and 1 tsp olive oil.
season with ¼ tsp salt and a pinch of pepper.mix well.
carefully remove tray from oven and add cauliflower to the open side of the sheet tray, making sure to keep in an even layer.
bake for an additional 10-12 minutes until cauliflower is tender.
while cauliflower cooks make sauces.
In a small pot add 1 tsp olive oil and place over medium heat.
once hot add flour and stir until not dry flour remains.
add ½ cup of water, beef demi and garlic pepper.
bring to a simmer and stir often until smooth and slightly thickened.
Cheese sauce and finish dish
in anoher small pot combine ¼ cup of water, cream cheese and pinh of salt.
bring to a simmer of medium high heat while stirring often.
once mixture comes to a boil and contents are smooth and have began to thicken slightly remove from heat and stir in cheese until fully melted.
Top meatloaf with peppercorn gravy and cauliflower with cheese sauce and crispy onions. Bon appetite!
