To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

1 Prepare the Ingredients
In a microwave-safe bowl, combine 1 Tbsp. olive oil and butternut squash. Microwave uncovered until tender, 5-8 minutes.
Carefully remove from microwave.While butternut squash microwaves, trim and thinly slice green onions on an angle, keeping white and green portions separate.Coarsely crush crackers.In a mixing bowl, combine crackers and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground pork, white portions of green onions, ginger, Asian garlic, ginger & chile seasoning (use less if spice-averse), 1/4 tsp. salt, and a pinch of pepper. Stir until thoroughly combined. Form meat mixture into 8 equally-sized meatballs. -
2 Bake the Meal
Spray provided tray with cooking spray.
Place bok choy and microwaved butternut squash in prepared tray and toss with minced garlic and chili pepper (to taste), 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Push to one side of tray. Squash will be hot! Use caution.Place meatballs in empty side of tray.Bake uncovered in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove from oven. Stir orange sauce (to taste) into meatballs until coated. Tray will be hot! Use a utensil.While meal bakes, continue recipe. -
3 Make Sauce and Finish Meal
In another microwave-safe bowl, combine creme fraiche, miso base, and 1 Tbsp. water. Cover with a paper towel.
Microwave covered until sauce is heated through, 30-45 seconds.Carefully remove from microwave.To serve, top vegetables with sauce and garnish meal with sesame seeds and green portions of green onions. Bon appétit!
