And here we have yet another iteration of comfort bowl of pasta, and why the heck not? The last few years, we deserve all the comfort we can get. Fresh mushrooms and pungent garlic form the base of sauce, along with tomato paste. Pasta gest stirred in, along with fresh spinach, and topped with cheese… how classic can you get! Classic, comfort, delicious…. You deserve it.

You Will Need
Large Non-Stick Pan
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Cook the Pasta
Once water is boiling, add pasta and cook until al dente, 8-10 minutes.
Reserve 1 cup pasta cooking water. Set aside.Drain pasta in a colander. Set aside.While pasta cooks prepare ingredients.
Prepare the Ingredients
Mince garlic.Halve French roll, if necessary.
Start the Sauce
Place a large non-stick pan over medium heat and add 1 tsp. olive oil.
Add mushroom and stir occasionally until tender and lightly golden, 6-8 minutes.Add garlic to hot pan and stir occasionally until toasted and fragrant, 30-45 seconds.Add mirepoix base, tomato paste, a 1/4 tsp. salt, a pinch of pepper, and half the pasta cooking water and bring to a simmer. Stir occasionally until slightly thickened, 1-2 minutes minutes. If sauce is too thick, add remaining pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.While mushrooms cooks, start garlic bread.
Make the Garlic Bread
Spread butter on cut sides of French roll. Season with a pinch of salt.
Place rolls bun side down, directly on oven rack in hot oven and toast until golden brown, 5-7 minutes.Carefully remove from oven.
Finish Pasta and Finish Dish
Add spinach and pasta to sauce and stir occasionally until spinach has wilted and pasta is evenly coated, 30--60 seconds.
