Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using Italian sausage, break up sausage until no pink remains and sausage reaches minimum internal temperature, 4-6 minutes.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Prepare the Ingredients
Line a microwave-safe plate with a paper towel. Spread bacon evenly on towel-lined plate.
Microwave until crisp, 1-2 minutes.Carefully remove from microwave.While bacon microwaves, remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.Halve and peel yellow onion. Cut halves into 1/4" dice.Trim and thinly slice green onions.Pat chicken dry. Season all over with blackening seasoning and a pinch of salt. -
2 Cook the Vegetables
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.
Add yellow onions, bell peppers, and a pinch of salt and pepper to hot pan. Stir occasionally until vegetables are tender and slightly browned, 6-8 minutes. -
3 Add the Chicken
Add 1 tsp. olive oil and chicken to hot pan. Stir occasionally until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes.

4 Add the Sauce and Rice
Add cream base, cheese, chicken base, and a pinch of salt and pepper to hot pan. Stir often until combined and sauce is slightly thickened, 2-3 minutes.
If too thick, add water, 1 tsp. at a time, until desired consistency is reached.Remove from burner.While chicken mixture cooks, continue recipe. -
5 Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps and remove from packaging.
In a microwave-safe bowl, combine rice and 1/4 tsp. salt. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in pesto until combined and fluff rice with a fork.Plate dish as pictured on front of card, topping rice with chicken mixture. Garnish with green onions, bacon, and crispy onions. Bon appétit!
