1 Prepare the Ingredients
Mince chives.
Halve and peel onion. Slice halves into thin strips. In a mixing bowl, combine panko, ground beef, demi-glace, half the onion salt (reserve remaining for gravy), and a pinch of pepper. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. -
2 Cook the Loaves
Place a large non-stick pan over medium-high heat.
Add meatloaves to hot, dry pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.Transfer meatloaves to a plate. Keep pan over medium heat; no need to wipe clean. -
3 Cook the Onions
Add 2 tsp. olive oil and onions to hot pan. Stir occasionally until browned, 8-10 minutes.
If pan becomes dry, add water, 1 Tbsp. at a time, as needed. -
4 Make Gravy and Add Loaves
Add flour to hot pan and stir occasionally until no dry flour remains.
Add 2 cups water, mushroom base , remaining onion salt, and half the creme fraiche (reserve remaining for mashed potatoes).
