Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Prepare the Potatoes

    Cut potatoes into 1/2" wedges.

    Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil, potato spice seasoning, and a pinch of salt and pepper.

    Push to one side of sheet and spread into an even layer on one side.

    Prepare the Puff Pastry

    Remove puff pastry from refrigerator. Remove any paper between puff pastry squares, if necessary.

    On a clean, flat work surface, evenly spread half the pesto (reserve remaining for sauce) on puff pastry squares, then firmly press on cheese.

    Roll up (like a cinnamon roll), then cut each cylinder into 6 evenly-sized rounds (you should have 12 pinwheels total).

    Place pinwheels, swirl-side up, on empty side of baking sheet, lightly pinching the ends closed to help seal.

    Start the Potatoes and Pinwheels

    Roast in hot oven until pinwheels are golden-brown, 13-15 minutes.

    Carefully remove sheet from oven.

    Transfer pinwheels to a plate and set aside. Potatoes will finish cooking in the next step.

    Add Salmon and Finish Potatoes

    Pat salmon dry and season flesh side with garlic salt and a pinch of pepper.

    Place salmon, skin-side down, on now-empty side of sheet. Evenly top with 1 tsp. olive oil.

    Sheet will be hot! Use caution.

    Roast in hot oven until potatoes are tender and salmon reaches a minimum internal temperature of 145 degrees, 14-18 minutes.

    While salmon and potatoes roast, continue recipe.

    Heat Peas, Make Sauce, and Finish Dish

    Place peas in a microwave-safe bowl. Add softened plain butter, lemon n herb seasoning, and a pinch of salt. Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave and stir to combine. Set aside.

    In another microwave-safe bowl, combine remaining pesto, softened garlic & herb butter, softened creme fraiche, a pinch of salt, and 1 tsp. water. Microwave uncovered until melted, 10-20 seconds.

    Carefully remove from microwave and whisk until combined and smooth. Set aside.

    Plate dish as pictured on front of card, topping salmon with sauce. Bon appétit!
