To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Start the Vegetables
Quarter potatoes.
Halve garlic. Place garlic halves and 1/2 tsp. olive oil on a piece of foil and form a foil pouch around garlic.Stem jalapeño, halve, seed, and remove ribs. Wash hands and cutting board after working with jalapeño.Place potatoes on one half of prepared baking sheet. Toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer on their side.Place jalapeños, cut-side down, on empty side of sheet.Place garlic pouch in empty corner of sheet.Roast vegetables in hot oven, 15 minutes.Carefully remove from oven. Transfer garlic pouch and jalapeños to a plate and set aside. Let cool, at least 5 minutes.While vegetables roast, continue recipe. -
2 Prepare the Ingredients
Trim bottom end from broccolini.
Mince cilantro (no need to stem).Pat steaks dry. Season both sides with 1/4 tsp. salt and garlic pepper. -
3 Add Broccolini and Finish Vegetables
Place broccolini on empty half of baking sheet. Toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer on their side. Sheet will be hot! Use a utensil.
Roast in hot oven until vegetables are tender and browned, 8-10 minutes.Carefully remove from oven.While vegetables roast, continue recipe. -
4 Cook the Steaks
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan. Cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate and cover with foil. Rest, 3 minutes.While steaks cook, continue recipe. -
5 Make Crema and Finish Dish
After 5 minutes, or once cool enough to handle, transfer garlic and jalapeños to a clean, flat work surface.
Mince garlic.Mince jalapeños.In a heat-safe mixing bowl, combine cilantro, 2 tsp. olive oil, garlic, jalapeños (to taste), red pepper flakes (to taste), lemon juice, a pinch of salt, and creme fraiche.Plate dish as pictured on front of card, topping steak with crema (to taste). Slice steak, if desired. Bon appétit!
