  • Step 1 - Bake the Chips

    Bake the Chips

    Slice the sweet potato into slices about 1/8 inch thick. Heat oven to 375 degrees. In a bowl, combine the sweet potatoes, olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper and toss together. Spread the sweet potato slices out in a single layer on a baking sheet. Bake for 20 minutes. Meanwhile, get to work on the Sloppy Joes.

  • Step 2 - Prep the Vegetables

    Prep the Vegetables

    Chop the onion, bell pepper, and poblano pepper into pieces about ¼ of an inch square. You will need ½ cup of onion, ½ cup of bell pepper, and ¼ cup of poblano pepper.

  • Step 3 - Cook the Beef

    Cook the Beef

    Heat a pot over medium heat. Add the beef, and the remaining salt, and pepper. Use a wooden spoon to break the beef into small pieces as it cooks. Once the beef has cooked, add the onion and peppers. Cook until the onions and peppers are soft, this will take about 3 minutes.

  • Step 4 - Make the Sauce

    Make the Sauce

    Add the ketchup, dry mustard, brown sugar, chili powder, and water to the beef. Stir to combine. Let simmer for 12 minutes.

  • Step 5 - Brown the Chips

    Brown the Chips

    Increase the heat of the oven to broil. Watch closely and cook for 3-4 minutes until the sweet potatoes are slightly brown. Then remove from the oven.

  • Step 6 - Plate the Dish

    Slice the buns in half, and scoop a generous portion of the sloppy joe beef on top. Have napkins at the ready.
