Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using 20 oz. steak strips, follow same instructions as 10 oz. steak strips, working in batches if necessary. You may have leftover filling.

  • If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

  • If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

    Prepare the Ingredients

    Cut mushrooms into 1/4" slices.

    Core tomato and cut into 1/4" dice.

    Trim and thinly slice green onions, keeping white and green portions separate.

    Pat steak strips dry. Coarsely chop, then separate pieces.

    Cook the Filling

    Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add steak strips, mushrooms, and white portions of green onions to hot pan. Stir occasionally until no pink remains and steak strips reach a minimum internal temperature of 145 degrees, 4-6 minutes.

    Remove from burner. Transfer filling to a mixing bowl. Rest, 3 minutes.

    Drain any excess liquid from steak strips. Stir in umami seasoning and truffle salt (to taste) until combined. Set aside. Wipe pan clean and reserve.

    While steak strips cook, continue recipe.

    Make the Salsa

    In another mixing bowl, combine tomatoes, green portions of green onions, 1 tsp. olive oil, and a pinch of salt and pepper. Set aside.

    Assemble the Quesadillas

    Place tortillas on a clean work surface.

    Divide cheese evenly between tortillas, placing on one half. Top cheese with filling. Fold tortillas over filling, pressing gently to adhere.

    Cook Quesadillas and Finish Dish

    Return pan used to cook filling to medium-low heat and add 1 tsp. olive oil.

    Working in batches, place two or three quesadillas in hot pan (there should be no overlap). Cook until golden-brown, 1-2 minutes per side.

    Repeat with remaining quesadillas, adding 1 tsp. olive oil for each batch. Remove from burner.

    Plate dish as pictured on front of card, halving quesadillas, if desired, and topping with salsa. Bon appétit!
