You Will Need
Large Non-Stick Pan
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Roast The Potatoes
Cut potatoes into ¼" fries and pat dry. Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, ¼ tsp salt and a pinch of pepper. Spread into a single layer and bake in hot oven until lightly browned, 25-28 minutes, tossing fries halfway through. Remove from oven and toss with truffle oil.
While potatoes cook, prepare the ingredients.
Prepare The Ingredients
Halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon. Cut into ¼" slices.
Coarsely chop tomatoes.
Add mayo and roasted tomatoes to a bowl until completely combined.
Cook The Burger
Form ground beef into two patties, 5" in diameter. Season both sides with a pinch ofsalt and pepper.
Place a large non-stick pan over medium-high heat. Add patties to hot pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.
Transfer patties to a plate. Reserve pan; wipe clean.
Toast The Buns
In the same pan over low heat, add buns cut side down. Toast bread until lightly toasted, 2-3 minutes.
Finish The Dish
Spread aoili mixture evenly on bottom buns. Top with beef patty, avocado, arugula, and top bun.
