Roast the Potatoes
Cut potatoes into ¼"-thick fries and pat dry.
Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, seasoning blend, 1/4 tsp. salt, and a pinch of pepper.Spread into a single layer and roast in hot oven until lightly browned, 25-28 minutes, tossing fries halfway through.Carefully remove from oven and toss roasted fries with truffle oil. Baking sheet will be hot! Use a utensil.While potatoes roast, prepare ingredients. -
Prepare Ingredients and Make Aioli
Halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon. Cut into 1/4" slices.
Coarsely chop tomatoes.Combine mayonnaise and tomatoes in a mixing bowl. Set aside. -
Make the Burgers
Form ground beef into two patties, about 5" in diameter. Season both sides with a pinch of salt and pepper.
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add patties to hot pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.Remove from burner. Transfer patties to a plate. Wipe pan clean and reserve. -
Toast the Buns
Return pan used to cook burgers to low heat. Add buns, cut side down, to hot, dry pan. Toast buns until lightly browned, 2-3 minutes.
Remove from burner. -
Finish the Dish
Plate dish as pictured on front of card, spreading aioli on bottom bun and topping with patty, avocado, arugula, and top bun. Bon appétit!
