Tender chicken breasts are enveloped in smoky, thinly sliced bacon and baked until succulent and crisp. Fresh baby spinach and crisp, tart apples are dressed with a light citrus mustard dressing and topped with nutty shaved Parmesan. This is a great summer dish that only requires 10 minutes of active preparation time.

Recipe Steps

  • Step 1 - Cook the Chicken

    Cook the Chicken

    Preheat the oven to 350F degrees. Sprinkle salt and pepper over the chicken. Then wrap 2 pieces of bacon around each chicken breast. Place on a baking sheet prepared with parchment or a silicone baking liner, and bake for 25-30 minutes, until no longer pink in the center.

  • Step 2 - Prepare the Dressing

    Prepare the Dressing

    Squeeze 2 Tbsp of juice from the lemon. Then in a small bowl whisk together the lemon juice, olive oil, and mustard.

  • Step 3 - Dress the Spinach Salad

    Dress the Spinach Salad

    Wash and thinly slice the apple and toss with spinach in the dressing, and divide it between two plates.

  • Step 4 - Plate the Dish

    Plate the Dish

    Thinly shave or grate the Parmesan over the spinach salad. Then place the bacon-wrapped chicken breast over the spinach salad. Enjoy!
